It’s a pumpkin spice waffle kinda day at the Green house!
I love mornings. It’s breakfast time! It’s a new beginning! The house is quiet!
Before I became a mom, it was the perfect time to read, or pretend to exercise with my fitness gear on. Now I don’t even pretend, I wear yoga pants for comfort and there is a 90% chance I’m not headed to a yoga studio. This morning was no exception, I headed to the kitchen in my comfy pants to make waffles!
Who doesn’t love waffles?
Waffles are probably one of my favorite breakfast foods and since pumpkin season is ending, I was excited to get my hands on a box of organic pumpkin spice pancake mix, found in the clearance section at Target for $3. Again, 3 dollas!!
I had never tried this mix, but I planned to let Justin, (my husband, for those new to the site) be testing guinea pig, and I went for it.
All I needed for the pumpkin spice waffles: (4 ingredients)
- 1 Cup of Organic Pumpkin Spice Stacks Pancake Mix
- 1/4 Cup of Almond Milk
- 2 Tablespoons of Butter
- 1 egg
I mixed up all the ingredients and the mix smelled heavenly. I wish I could send you the smell through your computer screen.
It was nice and thick and ready for the waffle iron.
If you don’t have a waffle iron, I highly recommend getting an inexpensive one. It will change your breakfast, and as a result change your life. I purchased mine for less than $20.
The final result was really good pumpkin spice waffles, made in less than 30 minutes! I let Justin try and he was actually impressed! This is the second time in less than two weeks that a pumpkin recipe surprised him, in a good way.
Add some syrup, or eat right off the waffle iron.
This was a great start to a beautiful morning. These waffles were out of a box, but I couldn’t tell, and I didn’t care. They tasted amazing. My only regret is that I didn’t make more.
